Bourbon whiskey is simply a form of American whiskey, a fermented liquid made predominantly from grain or oak barrels. Distilled from anywhere from four to eight different types of grain, the whiskey will have a distinctive flavor, but is typically sweet and light compared to other whiskies. The oldest version of Bourbon whiskey was a hodge-podge of sugar, wood, yeast and Bourbon barrel material. Today’s version is more similar to a scotch than a whiskey; the flavor is generally more restrained, with a mellow oak flavor and very little or no rye in it.

There are several methods used to produce good Bourbon whiskey; the most common method is to take the first step of aging in a new oak barrel, known as the “maturation” stage. Most whiskeys that end up being marketed as Bourbon are actually “distilled on the spot” using new oak barrels which have not been “matured” yet. The majority of distilleries use what is called a maturation mash to do this, but some still use a mashing process.

The maturation mash in a majority of distilleries is made by combining corn sugar (sometimes also known as brown sugar) with brandy or whiskey for secondary fermentation. This creates a dark, smoky and sweet taste on the palate. The corn sugar is the product of the yeast eaten by yeast during the primary fermentation process and provides the body and head. The distilling of the whiskey completes the process and results in a less sweet taste than if the mash had been further fermented. Bourbon is made in America, Britain, Ireland and Canada.

The whiskey of the same name is actually a blend of two different whiskeys, both made from the same maturation mash. The mash itself is not very different, except that the distilleries add water and yeast to equal the amount of malted barley that the name Bourbon calls for. Distillation makes the whiskey much lighter, but it does not alter the character of the blend. Bourbon is actually made at different locations throughout the United States.

Scotch is another of the American whiskeys that is distilled. The exact flavor of Scotch depends upon the aging of the whiskey and on the addition of rye or wheat. Typically, the older the whiskey, the sweeter it becomes, and the heavier it becomes on the palate. Some of the most famous Scotch whiskies include Bowtlow, James Scott and Blended Scotch. In addition to being distilled, Scotch can also be blended.

American whiskey is made in several places, including Texas and Pennsylvania. Pennsylvania is known for its high rye mash and for the highest percentage of wheat. Texas holds the dubious distinction of having the highest percentage of all whiskey in the world. Most of the whiskey produced in the United States is distilled in New York. The mash that is used to create whiskey in the U.S. is typically a mix of corn, rye or barley. Distillation yields a highly concentrated form of alcohol, which is stored in stainless steel barrels.
